  • Set the oven to 200 °C.
  • Slice the salmon into serving pieces.
  • Cut red onion into wedges, bell pepper into pieces, and slice leek, carrot, and zucchini.
  • Mix olive oil, thyme, oregano, and vegetables in a bowl, then transfer the mixture to an ovenproof dish.
  • Drizzle a couple of tablespoons of water over the vegetables and place the salmon fillets on top.
  • Sprinkle with salt and pepper, and cover the dish with aluminum foil.
  • Bake in the oven for about 20-25 minutes. Check if the fish is done by gently pressing on it. If it flakes, it’s ready to serve.
  • Serve with sour cream.
