Salmon Burger with Homemade Lemon Mayonnaise

Burger Buns

Method

  • Preheat the oven to 220°C.
  • Finely chop the salmon fillet and parsley, then mix with salt and pepper.
  • Shape a flat salmon patty per portion and fry them in margarine over medium heat for 2-3 minutes on each side.

Burger Buns

  • Dissolve the yeast in lukewarm water, then mix with wheat flour, olive oil, and salt.
  • Knead the dough well and let it rise until doubled in size. The dough should be slightly moist.
  • Divide the dough into equal portions and shape into small flat rounds.
  • Place on a baking sheet lined with parchment paper, brush with milk, and sprinkle with sesame seeds.
  • Let rise until doubled in size, then bake in the oven for about 10 minutes.

  • Mix egg yolk and mustard.
  • Slowly add olive oil while vigorously whisking. If the mayonnaise becomes too thick, add a little water.
  • Season with lemon juice, salt, and pepper.
  • Serve the salmon burgers in warm burger buns with lemon mayonnaise, cucumber, and lettuce.
