Method

  • Peel the shrimp if you bought them with shells on. If you want to save time, you can also use frozen, pre-peeled shrimp or shrimp preserved in brine.
  • Finely chop the garlic and chili, and sauté them in rapeseed oil for 1 minute.
  • Add the shrimp and sauté for another minute. Be careful not to overcook the shrimp.
  • Transfer the shrimp to a bowl and set aside.
  • Create thin strips of squash using a mandolin or spiralizer.
  • Warm the squash strips in a frying pan with rapeseed oil for a couple of minutes.
  • Mix together double cream, egg yolk, and Parmesan, then pour into the frying pan and heat through.
  • Let it simmer on low heat for five minutes. Be careful that the heat isn't too high, as the egg mixture can curdle.
  • Season with salt and pepper to taste.
  • Stir in the shrimp just before serving.
  • Serve with lemon wedges and optionally sprinkle with some grated Parmesan.

Tip:If you don’t have a mandolin or spiralizer, you can cut the squash into four lengthwise pieces and shred it with a cheese slicer or vegetable peeler.
