Method

  • Toss the mackerel fillets in a mixture of whole wheat flour, salt, and pepper.
  • Cook them in oil until delicately browned and thoroughly cooked, about 2 minutes on each side.

Tomato Sauce

  • Combine apple cider vinegar, chopped tomatoes, sugar, salt, and pepper to make the infusion.
  • Stir until the sugar dissolves.
  • Place the mackerel fillets in a deep dish and pour the tomato infusion over.
  • Let the mackerel marinate in the refrigerator until the next day.
  • Use mackerel in tomato as a spread on bread or with freshly boiled potatoes and salad.

Tip:You can cut the mackerel fillets into smaller pieces and mix them well into the tomato sauce so it's easier to put on bread. If you want a spicier variation, you can add some chili to the tomato sauce.
