Marinated cod with steamed carrots and nut butter

Method

  • Preheat the oven to 180 °C.
  • Cut the cod fillet into serving pieces.
  • Make a brine by dissolving salt in cold water, and let the cod pieces soak in the brine for 10 minutes.
  • Remove the pieces from the brine, pat them dry thoroughly with paper towels, and place them in a greased ovenproof dish.
  • Finely chop chili, garlic, ginger, and chives, and combine with olive oil.
  • Pour the marinade over the fish and let it marinate for 10 minutes.
  • Bake the fish in the oven until cooked through, about 10 minutes.

Carrots

  • Peel the carrots and cut into small batons approximately 3 x 1 cm.
  • Place them in a saucepan with salt, sugar, and butter, and add water until nearly covering the carrots.
  • Cover and steam for about 4 minutes until the carrot sticks are just tender.

Nut butter

  • Slowly brown the butter until it turns nut-brown and strain through a fine-mesh sieve.
  • Stir in soy sauce and season with lime juice.
  • Serve the cod with carrots, nut butter, and boiled potatoes.
