Moules Frites – Mussels with French Fries

Method

French Fries

  • Preheat the oven to 200°C.
  • Cut potatoes into strips or wedges, toss in some cooking oil, garlic, and thyme.
  • Place the potato strips on a baking sheet. Season with salt and pepper to taste.
  • Bake for 20-30 minutes until the potatoes are tender.

Aioli

  • Finely chop garlic and combine all ingredients in a bowl. Whisk well together.

Prepare the mussels

  • Rinse the mussels in cold water, remove broken/damaged shells.
  • Roughly chop shallots, garlic, and parsley.
  • Heat butter and sauté shallots and garlic for a few seconds.
  • Add mussels and white wine. Cover with a lid and steam for one minute or until the mussels have opened. Discard those that do not open.
  • Fold in chopped parsley and serve with the potato wedges and aioli.
