  • Season the cod with salt and coarsely grind black pepper.
  • Chop onion, potatoes, and celeriac into approx. 1×1 cm pieces.
  • Heat a pot with oil and sauté the onion, potato, and celeriac cubes until they start to turn light brown and become tender, about 7 minutes.
  • Add chopped garlic, apple cubes, halved cherry tomatoes, and salt.
  • Then pour in the apple juice and let it simmer vigorously for 5 minutes.
  • Place the cod on top. Cover and let it simmer gently for 8–10 minutes, or until the fish is done. You’ll know it’s ready when it flakes easily when pressed lightly.
  • Sprinkle with fresh basil and good quality olive oil.
