Oven-baked cod with bacon

Method

  • Set the oven to 200 °C.
  • Cut the dried salt cod into serving pieces.
  • Peel the potatoes, slice them, and cook until tender in unsalted water.
  • Finely chop the garlic, slice the onion, cut the red pepper into pieces, and halve the cherry tomatoes.
  • Cut the bacon slices into four pieces.
  • Heat olive oil and garlic in a small saucepan, and pour half of the garlic oil into an ovenproof dish to cover the bottom.
  • Layer the salt cod, potatoes, onions, red pepper, cherry tomatoes, bacon, and olives in the dish. Season with a little pepper between each layer.
  • Pour over the remaining garlic oil and bake in the oven for about 30 minutes.
  • Serve the baked cod with bread on the side.
