Method

  • Preheat the oven to 150 °C.
  • Sprinkle coarse salt on the halibut fillet and let it sit for about 5 minutes.
  • Rinse off the salt with cold water and pat the fillet dry with paper towels.
  • Place cherry tomatoes in a greased ovenproof dish with olive oil, grated garlic, a pinch of salt, and sugar, then bake in the oven for about 15 minutes.
  • Toast pine nuts in a dry skillet.
  • Cut the halibut fillet into serving portions and place the pieces on a baking sheet with parchment paper. Bake in the oven for 8–12 minutes.

Almond Potato Purée

  • Peel and boil the mashed potatoes in water without salt until tender.
  • Drain the water and let the potatoes steam dry.
  • Mash the potatoes, add butter, and mix well.
  • Add whole milk for the desired consistency, and season with salt and pepper.

Browned butter

  • Bring butter to a boil in a saucepan and remove the foam with a spoon.
  • When the butter starts to brown, strain it into a new saucepan, leaving the browned bits behind.
  • Add chopped shallots, soy sauce, and the juice and zest of a lemon.

Warmed broccoli

  • Cut broccoli into small florets and lightly boil them in water.
  • Drain the water and toss the broccoli in olive oil and lemon juice.
  • Taste with salt.

Serving

  • Serve the halibut with pine nuts sprinkled on top, alongside cherry tomatoes, mashed potato purée, browned butter, and warmed broccoli.
