Baked Trout with Paprika Sauce

Method

  • Preheat your oven to 175°C (347°F).
  • Slice the trout into serving pieces, and sprinkle with salt, white pepper, and pink peppercorns.
  • Place the trout fillet in an ovenproof dish brushed with butter.
  • Bake in the oven for 10–15 minutes.

Sauce

  • Cut the bell peppers into cubes and sauté until tender in olive oil.
  • Add finely chopped basil, pink peppercorns, and fish stock, and simmer until reduced by about two-thirds.
  • Mix cornstarch dissolved in crème fraîche into the sauce, bring to a boil, and season with salt and pepper.
  • Serve the baked trout with paprika sauce and rice.
