Baked Haddock in Lemon and Apple Sauce

Baked fish is easy to prepare and can be varied in countless ways. In this recipe, the haddock is baked with a fresh sauce and served with rice and avocado. A simple, healthy, and delicious dinner! All our recipes are sourced from godfisk.no

Method

  • Cook the rice according to the instructions on the package.
  • Preheat the oven to 180 °C.
  • Cut the haddock fillet into serving pieces and sprinkle with salt and pepper.
  • Grate the lemon zest and squeeze the juice.
  • Place the fish pieces in a greased ovenproof dish along with whole garlic cloves.
  • Drizzle with olive oil and sprinkle with lemon zest.
  • Slice the spring onion into thin rings. Dissolve the cornstarch in the apple juice.
  • Bring lemon juice, spring onion, and apple juice with the cornstarch to a boil. Pour over the fish.
  • Bake in the oven until the fish is cooked through, about 15 minutes.
  • Serve the fish with rice, avocado, and a bit of spring onion on top.
