Oven-baked cod with green sauce

Oven-baked cod fillet is an easy weeknight dinner. Place potatoes and vegetables in the same dish for a hassle-free meal. A chilled green herb sauce adds an extra flavor touch. All our recipes are sourced from godfisk.no

Method

  • Preheat the oven to 180 °C.
  • Cut the hake into serving pieces.
  • Peel and thinly slice the potatoes.
  • Place the potato slices in an ovenproof dish, sprinkle with a little salt, and drizzle with oil.
  • Put the dish high in the oven and bake for about 15 minutes.
  • Cut the mushrooms into smaller pieces, and finely chop garlic, parsley, and basil.
  • Sauté the mushrooms and garlic in a little oil for 1-2 minutes.
  • Stir in parsley and season with salt and pepper.
  • Pour the mixture over the potatoes.
  • Sprinkle basil, salt, and pepper over, and place the fish in the dish.
  • Cut cherry tomatoes in half and add to the dish.
  • Continue baking in the oven until everything is tender, about 15 minutes.

Sauce

  • Finely chop flat-leaf parsley, mint, and garlic.
  • Whisk all the ingredients for the sauce together until it is rich and creamy.
  • Serve the dish with the sauce on the side.
