  • Preheat the oven to 200/220°C (conventional / fan oven).
  • Cut the Skrei into approximately 50-gram pieces and sprinkle with a little salt and pepper.
  • Cut the onion and fennel into 1 cm wedges and sauté in a pan for 5 minutes until they become nicely colored.
  • Add chopped chili, garlic, and tomato purée; cook for an additional 2 minutes.
  • Add chopped plum tomatoes and fish stock. You can substitute the stock with water if desired.
  • Bring to a boil and pour everything into an ovenproof dish approximately 20×30 cm.
  • Nest the Skrei pieces into the vegetables, then sprinkle with thin slices of zucchini, olive oil, salt, pepper, and chopped parsley/sage on top. If you have a mandoline, use it for thin, delicate slices.
  • Bake the dish in the center of the oven for about 20 minutes.

Patatas Bravas Express

  • Cut the potato once lengthwise and twice crosswise to get 6 pieces.
  • Cook until just tender (about 10 minutes), then drain the water.
  • Sprinkle with salt, paprika powder, and toss in some butter/oil.
  • Spread on a baking tray lined with parchment paper and bake until crispy on the top rack of the oven at 220°C with fan. Approx. 20 minutes.

  • Press the garlic into the mayonnaise and stir in the olive oil.
