Preheat the oven to 100°C.
Place the cod in an ovenproof dish and sprinkle with salt and pepper.
Finely chop the garlic, mix with olive oil, and pour over the fish.
Bake the fish in the oven until it flakes easily when pressed, about 10 minutes.
Remove the fish and break it into flakes.
Peel the potatoes and cut into cubes, chop the leek, and cook the potatoes and leek until tender in fish stock.
Blend the mixture together with crème fraîche until smooth.
Season with salt and pepper to taste.
Serve the soup with the fish flakes added, sprinkled with chives, and with bread on the side.
