Portuguese Bacalhau

Method

  • Preheat the oven to 180 °C.
  • Cut the dried cod into pieces.
  • Peel potatoes and onions, and cut into slices.
  • Finely chop garlic and parsley, slice the olives into rings, and hard-boil the eggs.
  • Layer potatoes and onions at the bottom of a greased, ovenproof dish.
  • Add garlic, parsley, and olives on top, then place the cod pieces on the top.
  • Pour olive oil over the fish, and sprinkle with pepper.
  • Bake in the center of the oven until the cod is cooked and the potatoes are tender, about 35-45 minutes.
  • Serve Bacalhau topped with sliced hard-boiled eggs, with bread on the side.
