Quesadilla with Shrimp

Quesadilla is a tortilla wrap filled with cheese and various ingredients. The filling can be varied endlessly, but in this recipe, we've used one of the treasures from the sea – shrimp. Perfect as a quick dinner, Friday comfort food, or on a tapas platter! All our recipes are sourced fromgodfisk.no

Method

  • Finely chop onion, garlic, and chili, and dice bell peppers.
  • Sauté onion and garlic in rapeseed oil until the onion is translucent, then let it cool.
  • Add chili and bell peppers, and season with salt.
  • Mix in the shrimp, and distribute the filling over half of the tortilla wraps.
  • Sprinkle grated cheese over, and fold the other half over.
  • Cook the quesadilla on both sides in rapeseed oil in a frying pan until the cheese melts and the tortilla has a golden-brown color.
  • Serve the quesadilla with salad, avocado, lime wedges, and cilantro.

Tip:Feel free to accompany with salsa and homemade guacamole. You can also use frozen, pre-peeled shrimp in this recipe.
