  • Sear the cod in rapeseed oil over medium heat for about 3 minutes on each side. Add butter towards the end of cooking.
  • Cook the noodles according to the package instructions.
  • Slice carrots into thin strips, chioggia beets into thin slices, tear kale leaves into smaller pieces, and finely chop the spring onion.
  • Cook the carrot strips and chioggia beets for 2 minutes.
  • Add the kale and let it simmer for another minute. Drain the water and set the vegetables aside.

Soup

  • Dissolve the hon dashi in water and bring to a boil.
  • Add soy sauce and mirin, and stir well.
  • Place noodles, cooked vegetables, cod, and shrimp into serving bowls and pour the boiling soup over. Top with spring onion and pieces of nori seaweed.

Tip:Hon dashi is prepared broth that can be purchased at international and especially Asian grocery stores. Hon dashi can optionally be replaced with chicken broth.
