Salmon Rillette with Crispy Toast

Method

  • Preheat the oven to 80°C and bake the salmon until it flakes easily, about 10-15 minutes. Cooking time depends on your oven, so gently press on the fish when it starts to look done to check if it flakes apart. Keep the oven on and let the salmon cool for 10 minutes.
  • Flake the salmon and gently mix with crème fraîche, mustard, and chopped dill.
  • Season with salt, pepper, and lemon juice.
  • Fill small dishes with the salmon mixture, arrange on a plate, and remove the dishes when serving. You can also use small bowls.

Toast

  • Slice the baguette into thin slices.
  • Place the slices on a baking sheet lined with parchment paper, drizzle with olive oil, and sprinkle with salt and pepper.
  • Bake the slices in the oven until crispy and golden, about 7–8 minutes.
  • Serve the salmon rillette with crispy toast slices and garnish with fresh herbs if available.

Tip:If you put the baguette in the freezer for a couple of hours, it will be easier to slice.
