Salad with Mackerel and Sour Cream Dressing

Mackerel is summer food that tastes wonderful on the grill. In this recipe, the mackerel is grilled with cherry tomatoes and asparagus, served with a delicious dressing. All our recipes are sourced fromgodfisk.no

Method

  • Preheat the grill.
  • Cut the mackerel fillet into pieces.
  • Brush the mackerel pieces, cherry tomatoes, and asparagus with rapeseed oil, and season with salt and pepper.
  • Place everything on the grill and turn regularly for about 2 minutes. Let the cherry tomatoes and asparagus rest on a rack or in an area of the grill with lower temperature.

Salad

  • Slice red onion into strips and shave Parmesan cheese with a cheese slicer.
  • Mix everything in a salad bowl with lamb's lettuce.
  • Add the mackerel, cherry tomatoes, and asparagus to the salad, and gently toss.

Sour Cream Dressing

  • Finely chop pickles and dill, and squeeze the juice of a lemon.
  • Mix well with sour cream, mayonnaise, and pepper.

Serving

  • Serve the salad with mackerel, sour cream dressing, and bread.

Tip:If you don't have a grill, you can easily cook the mackerel and vegetables in a frying pan, preferably in a grill pan.
