Herring Cakes with Potato Wedges and Raw Vegetable Salad

Method

Preparation Method

  • Set the oven to 200 °C.
  • Cut the herring fillet into pieces.
  • Finely chop the onion and parsley.
  • Pulse the fish and salt in a food processor for a few seconds.
  • Add potato starch and gradually pour in cold milk while the food processor is running.
  • Add onion, parsley, and pepper to the mixture, and blend well.
  • Dip a spoon in cold water and shape the mixture into flat herring cakes.
  • Fry them in butter until they develop a golden brown crust.

Potato wedges

  • Peel the potatoes and cut them into wedges.
  • Place the potato wedges, olive oil, and salt in a bowl and toss well.
  • Arrange the potato wedges on a baking sheet lined with parchment paper, and bake in the oven for 20-25 minutes.

Raw Vegetable Salad

  • Grate the cabbage, carrot, and apple coarsely using a grater.
  • Mix mayonnaise, sour cream, lemon juice, sugar, and salt to make a dressing.
  • Combine the dressing with the vegetables.
  • Adjust the seasoning with cayenne pepper.

Serve the freshly cooked herring cakes with potato wedges and raw vegetable salad.

Tip:Feel free to add fresh herbs to the potato wedges, such as thyme or rosemary.
