Skrei with Mediterranean Flavors

  • Cut the skrei into roughly 3 cm cubes, sprinkle with a little salt, and let it sit for 7 minutes.
  • Rinse off the salt and gently pat the fish dry with paper towel.
  • Slice shallots and finely chop garlic.
  • Heat oil in a saucepan, add shallots and garlic, and sauté lightly until translucent, without browning.
  • Add canned tomatoes and let the sauce simmer for about 2 hours.
  • Cook the potatoes and cut them into slices.
  • Gently fold the fish cubes and potato slices into the sauce and let the dish simmer for a few minutes until the fish is cooked through.
  • Stir in olives, and season with salt, pepper, and a pinch of cayenne pepper.
  • Serve the stew with flatbread on the side. Feel free to sprinkle fresh herbs over the dish when serving.
