Cod with celeriac purée and salsa

Method

  • Preheat the oven to 180 degrees Celsius.
  • Divide the Skrei fillet into portions, sprinkle with salt and let it rest on the countertop for about 7 minutes. Rinse off the salt and gently pat dry with paper towels.
  • Place the Skrei in a greased ovenproof dish, season with pepper, and add butter and garlic. Bake in the oven for about 10 minutes.
  • Divide cherry tomatoes into four and finely chop garlic. Heat oil in a saucepan and add the garlic, quickly sautéing before adding the cherry tomatoes. Let it simmer for about 7-8 minutes.
  • Peel and dice the celery and sauté in butter for about 3-4 minutes without letting it brown. Pour in the cream so that it covers half of the celery. Cover with a tight-fitting lid and let the celery simmer until tender, about 10 minutes. Mash well and season with salt and pepper.
  • Serve the cod on a bed of celeriac purée topped with salsa.

Tip:For a little extra kick, add finely chopped chili to the salsa.
