Slice smoked salmon thinly.
Peel the cucumber, cut in half, scoop out the seeds, and dice into small cubes.
Finely chop the red onion and cut cherry tomatoes into wedges.
Toss the salad and arrange on a serving platter with cucumber, red onion, and cherry tomatoes.
Rinse the raspberries and blueberries.
Whisk together raspberry vinaigrette, honey, and Dijon mustard with an immersion blender, then slowly add the sunflower oil in a thin stream until the mixture thickens in consistency.
Season with salt and pepper, and possibly a little honey or lemon juice.
Toss the salad with a little of the vinaigrette before serving.
Top the salad with shrimp, smoked salmon, raspberries, and blueberries, and serve with bread and the remaining vinaigrette on the side.
