Squash Soup with Salmon

Method

  • Cut the salmon into small dice.
  • Clean and chop shallots and sauté until translucent in butter.
  • Divide the squash in half and scoop out the seeds. Slice it, mix with coarsely chopped onion, pour in fish stock, and cook until the squash is tender.
  • Puree and strain the soup, bring to a boil, and stir in lemon juice, grated ginger, salt, pepper, cayenne pepper, and heavy cream. Let the soup simmer gently for 2-3 minutes.
  • Taste the soup and adjust with salt and pepper as needed.
  • Add the salmon dice to the soup and let it simmer for a couple of minutes.
  • Serve the soup with bread, and if you have it, sprinkle some thyme on top.
