Pan-fried Monkfish in Citrus Sauce

Method

  • Sear the monkfish steaks in a mixture of butter and olive oil for about 1 minute on each side over good heat.
  • Reduce the heat and let the fish finish cooking for a few minutes until fully cooked.
  • Sprinkle with salt and pepper.

Sauce

  • Simmer the clementine and fish stock until mushy, then cook the mixture down to half.
  • Add double cream and Grand Marnier, and reduce until halved.
  • Stir in butter, a little at a time.
  • Add grated clementine zest just before serving.

Salad

  • Finely chop shallots and sauté in butter until soft.
  • Add heart of palm leaves and toss to wilt.
  • Serve the monkfish with citrus sauce, salad, and boiled potatoes.

Tip:Other types of citrus fruits can also be used.
