Cut the salmon into portioned pieces and gently pat them dry with kitchen paper.
Mix flour, salt, and pepper thoroughly in a plastic bag.
Place the salmon pieces in the bag and toss to coat.
Shake off any excess flour, and fry the salmon in olive oil over medium heat, about 3 minutes on each side.
Grate the pear and fold in the crème fraîche.
Season with salt and pepper to taste.
Serve the salmon with pear salad and boiled potatoes. Feel free to garnish with fresh herbs if you have any.
