Pan-fried Arctic char with asparagus and chervil sauce

  • Cut the Arctic char into serving portions, sprinkle with salt, and let it rest for about 10 minutes.
  • Rinse off the salt and thoroughly dry the fillets with paper towels.
  • Fry the Arctic char in oil over medium heat for about 2 minutes on each side.
  • Break off the woody end of the asparagus and cook in lightly salted water for 2 minutes.
  • Drain the asparagus well and toss in butter.

Sauce

  • Beat egg yolks with salt and pepper, then whisk in apple cider vinegar, and slowly stream in rapeseed oil to create a rich sauce.
  • Season with salt and pepper, then stir in chopped chervil.
  • Serve the Arctic char with asparagus and chervil sauce on the side.
