Fried cod with pea puree and bacon

Method

  • Start by boiling the potatoes.
  • Scrape the cod skin thoroughly, lightly salt the meat side of the fish, and let rest for about 10 minutes.
  • Rinse the salt off the cod in cold water and pat dry with paper towels.
  • Cut the fish into serving pieces and make a few diagonal slashes in the skin.
  • Add olive oil to a frying pan and place the cod with the skin side down.
  • Fry until the skin turns dark brown, about 4 minutes. Turn the fish and cook for an additional 1-2 minutes on the meat side.

Pea Purée

  • Cook the peas until tender, about 6 minutes.
  • Blend the peas and chopped garlic with an immersion blender, then stir in the butter.
  • Season with salt and pepper. If desired, flavor the puree with a little fresh thyme.

Side Dishes

  • Crisp up the bacon in the butter.
  • For extra flavor, roughly chop hazelnuts and add them to the butter.
  • Serve the cod with pea purée, boiled new potatoes, and bacon butter.
