Pan-fried Pollock with Basil Sauce

Method

  • Cut the pollock into serving portions and season with salt and pepper.
  • Slice the mushrooms and brown them in butter.
  • Remove the mushrooms and fry the fish for 2-3 minutes on each side.

Sauce

  • Pick and finely chop the basil leaves.
  • Finely chop the shallots and sauté in butter with half of the basil leaves for 3 minutes.
  • Pour in the white wine and let it simmer until reduced by half.
  • Add fish stock and cream, and bring to a boil.
  • Combine butter and flour into a paste, then stir it into the sauce.
  • Let the sauce simmer gently for 4-5 minutes and season with salt and pepper.
  • Keep the sauce warm without boiling. Stir in the remaining basil just before serving.
  • Serve the pollock with mushrooms, sauce, potatoes, sugar snap peas, and fresh cherry tomatoes.
