Baked Cod with Bacon

Oven-baked potatoes

Tomato Concassé

Method

  • Set the oven to 200 °C.
  • Cut the cod into serving pieces, place in a greased ovenproof dish, and season with salt and pepper.
  • Bake the cod in the oven for about 10 minutes.
  • Cut the bacon into pieces and crisp it up in a dry frying pan.

Oven-baked potatoes

  • Scrub and wash the potatoes, dry them, and cut in half.
  • Toss them in oil and place in a greased ovenproof dish.
  • Sprinkle with a little salt and pepper, and roast the potatoes in the oven for about 15 minutes.

Tomato Concassé

  • Drain the canned tomatoes well, and chop the chives.
  • Mix the tomatoes with the chives and olive oil, and season with salt, pepper, and sugar.
  • Serve the baked cod with bacon, oven-roasted potatoes, and tomato concassé.
