Cod with Carrot Puree and Bacon

Method

Carrot Purée

  • Wash, peel, and dice the carrots.
  • Cook until just tender in lightly salted water, about 4 minutes.
  • sieve the cooking water.
  • Make the sauce by heating liquid margarine in a saucepan, stir in flour, and gradually add milk, a little at a time.
  • Stir well and bring to a boil between additions. Let the sauce simmer for 2-3 minutes.
  • Stir in the carrot cubes and season with salt and nutmeg.

Cod and Bacon

  • Cut the fish into serving pieces.
  • Bring salted water to a boil, add the fish, and give it a quick boil.
  • Lower the heat and let the fish simmer until just cooked through, about 10 minutes.
  • Fry bacon until crisp, in slices or cubes.
  • Serve the freshly cooked cod with bacon, carrot puree, and boiled potatoes.
