  • Preheat the oven to 200 °C.
  • Cut the fish into serving pieces.
  • Peel and cut carrots, celery, apples, and red onions into 2-3 cm pieces and place in a greased ovenproof dish.
  • Lay the fish fillets over the vegetables and sprinkle with salt and pepper.
  • Pour over heavy cream and distribute crème fraîche over the fish.
  • Bake in the oven for about 15 minutes until the fish flakes and the vegetables are tender.
  • Add lemon juice, olive oil, and fresh basil.
  • Serve with boiled potatoes on the side.
