Herb-Marinated Grilled Salted Cod with Warm Chickpea Salad

Method

  • Blend basil, thyme, and garlic into a coarse purée using an immersion blender or in a blender. Add lemon juice, olive oil, and pepper, and blend until well combined.
  • Preheat the grill. Place the salted cod pieces on aluminum foil and brush with a little marinade.
  • Wrap the foil around the fish pieces and let it sit for a while so the flavors can infuse into the fish.
  • Grill the salted cod for 10-15 minutes. The fish is ready when it begins to flake apart.

Salad

  • Rinse chickpeas in cold water and cut chorizo into cubes.
  • Grill and peel the skin off the peppers.
  • Coarsely chop peppers, garlic, cherry tomatoes, almonds, and parsley.
  • Heat a frying pan with olive oil, add chickpeas and chorizo, and sauté briefly.
  • Add garlic, peppers, tomatoes, and almonds, and sauté for a few minutes.
  • Stir in parsley and olive oil, and season with pepper.

Serving

  • Serve the grilled salted cod with chickpea salad and bread. Feel free to sprinkle with some fresh herbs if you have any.
