Winter Salad with Smoked Salmon or Trout

There's nothing like a fresh and light winter salad packed with flavor. Smoked trout or salmon combined with pomegranate and fennel is a delightful pairing, especially when served with crisp Little Gem lettuce. All our recipes are adapted from godfisk.no

Method

  • Cook the baby potatoes until tender and set aside to cool. You can also use leftover potatoes.
  • Cut the rye bread into cubes and toast them crispy in a pan with butter.
  • Remove the thick stalks from the kale and massage the greens with oil and a pinch of salt until soft and shiny.
  • Slice the Little Gem lettuce into strips and mix with the kale.
  • Cut the potatoes into pieces, thinly slice the fennel, and cut the apples into thin slices. Remove the seeds from the pomegranate.
  • Distribute all the vegetables around the salad. Top with slices of smoked trout and crunchy rye bread croutons.
  • Mix together finely chopped herbs, mustard, and sour cream. Season with salt and pepper, then pour the dressing over the salad.
