Stir-fry with Shrimp and Shrimp Mayonnaise

Method

  • Clean the shrimp and set aside the shells.
  • Julienne Chinese cabbage, sugar snap peas, and bell peppers, and break cauliflower into small florets.
  • Stir-fry all vegetables in oil over high heat for about 2 minutes.
  • Stir in soy sauce, fish stock, and cayenne pepper, and bring everything to a vigorous boil.
  • Fold in the shrimp and gently reheat for 1 minute.

  • Heat shrimp shells and rapeseed oil over medium heat until the aroma of shells is strong.
  • Allow the oil to cool and strain out the shells.
  • Separate the eggs.
  • Whisk together egg yolk, lemon juice, mustard, salt, and pepper, then slowly drizzle in the oil to create a rich mayonnaise. A hand blender or immersion blender works well.
  • Whisk the egg whites until semi-stiff and fold in at the end.

Serving

  • Serve the stir-fry topped with sprouts, with the mayonnaise and bread on the side.

Tip:You can also use regular mayonnaise if you prefer not to make your own.
