Wrap with Pan-Fried Cod

Wraps can be filled with whatever you like, both hot and cold. In this recipe, we suggest filling it with pan-fried cod, mixed salad with nuts, and chili dressing. All our recipes are sourced from godfisk.no

Method

  • Cut the cod fillet into long, even pieces.
  • Season with salt, and drizzle with Worcestershire sauce and lime juice.
  • Fold a sheet of aluminum foil in half and brush it with rapeseed oil.
  • Place the cod on the foil.
  • Grill it for about 2 minutes, turn it over, and grill for another 2 minutes on the other side.

Salad

  • Wash the romaine lettuce and let all excess water drain off.
  • Slice the lettuce into strips, and cut cherry tomatoes in half.
  • Finely chop the red onion and tear the basil leaves.
  • Mix olive oil and balsamic vinegar together.
  • In a bowl, combine the salad, cherry tomatoes, red onion, and basil leaves. Pour over the oil dressing and toss to combine.
  • Finely chop the cashew nuts and sprinkle over the salad.

Dressing

  • Mix mayonnaise and sweet chili sauce to make the dressing.
  • Spread a bit of dressing along the center of each tortilla wrap, then add the salad and pan-fried cod on top.
  • Fold, roll up, and serve.

Tip:If you don't have access to a grill, the cod can also be cooked in a skillet.
