Method

  • Place the salted cod on a tray, pour over half of the olive oil, and top the pieces with garlic cloves and bay leaves.  
  • Put the tray in the oven at 220°C for 15-20 minutes.  
  • Add a little olive oil during cooking to keep it moist and give it a nice color.

Crushed potatoes

  • Boil small potatoes with skin for 10 minutes.
  • Use your hand or a flat object to press the potatoes flat so the skin breaks and they absorb the delicious flavors.
  • Finish cooking the potatoes in a pan with onions and garlic.

Sautéed spinach

  • Sauté sliced shallots and chili in olive oil. 
  • Add spinach and salt, and sauté for about 40 seconds.
  • Sprinkle with lemon juice, grated ginger, and chopped coriander.
