Salted Cod for Many

  • Cut the dried salt cod into serving pieces.
  • Peel the potatoes and onions, and slice them thinly.
  • Slice the bell peppers into strips, and finely chop the chili and garlic.
  • Heat olive oil in a saucepan and stir in tomato paste.
  • Add canned tomatoes, water, garlic, and chili. Mix well and bring to a boil.
  • Layer the salt cod, onions, potatoes, and peppers in the sauce.
  • Bring to a boil and simmer gently until the potatoes are tender, about 50 minutes. Add more water if it seems dry.
  • Gently shake the saucepan during cooking. Do not stir.
  • Season with pepper and cayenne pepper if necessary.
  • Add olives to the salted cod and serve with bread on the side.
