Fish and Chips

Fish and Chips is a classic British dish, and this recipe shows you how to make it yourself. Crispy, deep-fried cod, fries, and a fresh tartar sauce create a truly delicious combination! To make it authentic, serve the dish with pea purée. All our recipes are sourced from godfisk.no

Method

  • Pat the cod fillet dry and cut into desired pieces.
  • Season with salt and pepper.

Batter

  • Mix together all-purpose flour, salt, and baking powder, then add cold water.
  • Stir until you have a smooth batter, then let it rest in the refrigerator for 20 minutes.
  • Heat vegetable oil in a pot or deep-fryer to 160°C.
  • Dip the cod pieces into the batter, allowing excess to drip off.
  • Fry the pieces in oil, two at a time.
  • Cook for about 5 minutes until golden and crispy.
  • Transfer to paper towels to drain.

Tartar Sauce

  • Mix mayonnaise, sour cream, lemon juice, and mustard.
  • Stir in chopped cornichons, and season with salt and pepper.
  • Tip: For an extra flavor boost, add a few chopped capers.

Pea Purée

  • Cook the peas and drain the water.
  • Add butter to the peas and blend into a purée using an immersion blender.
  • Warm through in a saucepan and season with salt and pepper.

Serving

  • Serve the deep-fried cod with warm pea purée, French fries, tartar sauce, and lemon wedges.
