Fish Casserole with Salmon

Method

  • Set the oven to 200 °C.
  • Cut the salmon into cubes about 2 cm, slice the spring onions thinly, and finely chop the parsley.
  • Whisk together the wheat flour and double cream in a saucepan and bring to a boil while stirring continuously.
  • Season with salt, pepper, and nutmeg.
  • Beat the eggs in a bowl and gradually add the sauce, a little at a time.
  • Add the salmon cubes, spring onions, and parsley.
  • Pour into a greased ovenproof dish, and sprinkle with a mixture of bread crumbs and grated Parmesan cheese.
  • Bake the fish casserole in the oven for about 25-30 minutes on the lowest rack.

  • Serve the fish casserole with raw vegetables, and perhaps some rice if you wish.
