  • Quickly process hake and salt in a food processor until you have a smooth dough.
  • Add curry paste, grated lime zest, fish sauce, and egg, and blend until everything is combined.
  • Adjust with flour if the fish cake mixture is too loose.
  • Stir in finely chopped spring onions.
  • Cook a test cake and adjust the seasoning if necessary.
  • Shape into small fish cakes, and fry them in a little rapeseed oil until fully cooked and golden.

Tartar Sauce

  • Mix egg yolk with lemon juice, Dijon mustard, and pressed garlic.
  • Gradually whisk in the oil, a little at a time, continuously whisking.
  • Stir in chopped pickled cucumber and capers, and season with salt.
  • Serve the hake cakes with tartar sauce and sweet chili sauce on the side.
