Method

  • Preheat the grill.
  • Cut the monkfish into pieces approximately 3x3 cm.
  • Roughly chop the coriander and mix it with the yogurt.
  • Stir in tandoori masala, turmeric, and cayenne pepper.
  • Coat the monkfish in the marinade and let it marinate for at least 15 minutes.
  • Thread the monkfish pieces onto skewers and lightly brush with olive oil.
  • Grill the skewers over direct heat and turn them when you feel they loosen. Grill for about 10-15 minutes total.

Vegetable Skewers

  • Cook the potatoes for 10-15 minutes.
  • Cut the bell peppers and red onions into large chunks.
  • Thread potatoes and vegetables onto skewers and brush with olive oil.
  • Start grilling over direct heat for five minutes, then move them to indirect heat and continue grilling for 10 minutes.

Tzatziki

  • Grate the cucumber, finely chop the garlic and mint, and squeeze the lemon juice.
  • Place the grated cucumber in a coffee filter and gently press out excess water by pressing softly around the filter.
  • Mix cucumber, garlic, mint, and yogurt, then season with lemon juice, olive oil, salt, and pepper.
  • Serve the monkfish with vegetable skewers and tzatziki.

Tip:If using wooden skewers, soak them in water for 30 minutes before use.
