Grilled Salmon with Pineapple Salsa

  • Slice the salmon into serving pieces.
  • Dry the pieces with paper towels and brush with olive oil.
  • Zest the lemon and sprinkle it over the salmon along with salt. At the same time, squeeze out the lemon juice and set it aside for the salsa.
  • Place the salmon pieces on greased grill foil, and grill for about 5 minutes.

Salsa

  • Cut pineapple into small chunks and spring onion into thin rings, and finely chop chili and coriander.
  • Mix pineapple, spring onion, chili, and coriander in a bowl, then add lemon juice, sesame oil, and olive oil.
  • Stir the salsa well and taste, adding a bit of salt if needed.
  • Serve the salmon garnished with toasted sesame seeds, with pineapple salsa and couscous.
