Grilled mackerel with classic sides

  • Brush both the mackerel and the grill with oil to prevent sticking
  • Place butter and lemon slices inside the fish and sprinkle with chopped herbs, salt, and pepper.
  • Grill the fish with the skin on until the flesh loosens from the bone. You should adjust the cooking time based on the size of the mackerel, but about 5 minutes per side should be sufficient.
  • Slice zucchini into long, thin slices, and cut tomatoes in half. Brush the vegetables with oil, sprinkle with salt and pepper, and grill them alongside the fish.
  • Serve the freshly grilled mackerel and vegetables with good bread on the side. Bring along some sour cream and extra herbs – and you'll have summer's simplest fish dinner.
