Grilled citrus-marinated halibut with arugula and cashew nuts

Method

  • Cut the fish into serving pieces, and sprinkle with a little salt.
  • Carefully peel off the outermost layer of lime and lemon peel, and finely chop them.
  • Squeeze the juice of lime and lemon.
  • Crush the pink peppercorns and mix with the lime and lemon zest and juice, thyme leaves, and olive oil.
  • Toss the fish in the marinade, and let it sit for 10 minutes on the countertop.
  • Grill the fish for about 3 minutes on each side.

Salad

  • Place the arugula salad on a serving platter, and top with cashew nuts, capers, and sliced fresh and jarred bell peppers.
  • Drizzle with a little olive oil and sprinkle with grated Parmesan.
  • Serve grilled halibut with salad and bread.
