Fresh Herring Burgers

A fish burger can be served as both dinner and lunch, and taken on trips. In this recipe, you make the dressing yourself, but you can also buy it ready-made from the store. All our recipes are adapted from godfisk.no

Method

  • Divide the fish fillet into pieces and place the pieces in a food processor.
  • Add salt and run the machine until the mixture is smooth and sticky — it only takes a few seconds.
  • Pour the milk into approximately 3 servings, letting the machine run between each addition so the milk is well blended and the mixture becomes smooth.
  • Add potato starch, pepper, and chives.
  • Cook a small test patty and taste to check if it's seasoned to your liking.
  • Form flat patties and fry them in butter, about 3 minutes on each side.

Dressing

  • Mix together the ingredients for the dressing.

Side Dishes

  • Wash the salad greens.
  • Slice cucumber, red onion, and tomato, and wash the cherry tomatoes.
  • Warm the burger buns according to the instructions on the package.
  • Serve the herring burgers in burger buns with dressing, lettuce, and vegetables, and with cherry tomatoes on the side.
