Honey and Dijon Salmon with Bean Tzatziki

Method

  • Divide the salmon into four suitable portions and place them in a baking dish lined with a bit of oil.
  • Mix the ingredients for the marinade and pour it over the salmon pieces.
  • Bake the salmon in the oven at 180°C for about 12-15 minutes.

Asparagus Bean Tzatziki

  • Trim the ends of the asparagus beans and cut them into appropriate sizes, then blanch in lightly salted water for 2-3 minutes.
  • Drain and cool under running cold water.
  • Mix together the yogurt and the remaining ingredients, and season with salt and pepper.
  • Fold the beans into the mixture and serve alongside the salmon. Garnish with chopped herbs.

Tip:The salmon can also be cooked on the grill. Wrap the fish in foil and add the marinade. Grill with the foil covered or with the lid on for about 15 minutes. You can also use herbs other than parsley, or a mixture of various herbs. Serve with bread, rice, or potatoes.
