  • Cut the dried salt cod into serving pieces.
  • Dice the celery stalks and carrots into cubes, slice the onion, and finely chop the garlic.
  • Blanch the tomato by scoring a cross on top, dipping into boiling water for a couple of minutes, then transferring to ice-cold water. Peel off the skin, remove the seeds, and dice the tomato flesh.
  • Peel the potatoes and cut into small cubes about 1 cm in size.
  • Sauté the celery, carrots, onion, and garlic in olive oil in a saucepan.
  • Add the salt cod pieces and let everything sauté for about 2 minutes.
  • Pour in the tomatoes and vegetable broth into the saucepan.
  • Place the potato cubes over the salt cod and continue cooking for approximately 15 minutes.
  • Season with salt and pepper to taste.
  • Serve garnished with pine nuts, and preferably some fresh herbs if available.
