Boiled Cod with Broccoli Cream and Honey-Glazed Carrots

Method

  • Cut the cod into serving pieces.
  • Cut strips of the orange zest from the outer peel of the orange and slice the onion.
  • Bring water to a boil and add orange zest, onion slices, salt, parsley stems, black peppercorns, coriander seeds, fennel seeds, and star anise. Let the broth simmer and steep for 10 minutes to develop a rich spice flavor.
  • Add the cod pieces, bring to a boil, and let simmer for 10 minutes. Remove the skin before serving.

Broccoli Cream

  • Pick out some small broccoli florets and set aside.
  • Trim the remaining broccoli, cut into small pieces, and cook in unsalted water until tender.
  • Drain the cooking water and mash the cooked broccoli with butter until smooth.
  • Stir in crème fraîche, and season with salt and cayenne pepper.
  • Lightly fry the extra broccoli florets in butter and season with salt and pepper.
  • Gently fold the fried broccoli into the broccoli cream just before serving.

Honey-Glazed Carrots

  • Squeeze the juice from the orange and finely chop the rosemary.
  • Melt butter in a saucepan, then add orange juice, rosemary, and honey.
  • Peel and cut carrots into sticks, then add them to the saucepan.
  • Let the carrots simmer until tender.
  • Sprinkle with a little salt and pepper just before serving.
  • Serve the boiled cod with broccoli cream, honey-glazed carrots, and oven-roasted potatoes.
