King Crab with Cauliflower Purée and Citrus Dressing

  • Break the king crab legs into smaller pieces.

Dressing

  • Finely chop shallots.
  • Grate the lemon zest and squeeze the juice.
  • Sauté the shallots in rapeseed oil without letting them brown.
  • Add the shell and juice of the lemon, and honey.

Cauliflower cream

  • Cut the cauliflower into large florets.
  • Set aside a quarter of the cauliflower florets and cook the rest in cream until tender, about 20 minutes.
  • Puree the cooked cauliflower and season with salt and pepper.
  • Fry the remaining cauliflower florets in rapeseed oil until crispy and slightly browned, about 5 minutes.
  • Serve the king crab with citrus dressing, cauliflower purée and florets, field salad, and chervil.
